This cookbook is thorough and easy to follow. Download The Illustrated Encyclopedia of American Cooking by Publishing, FRP published by The Cookbook Marketplace Hardcover from rapidshare, mediafire, 4shared. My only problem is that it is nearly impossible to find. I have been looking for it to give as a gift. It would benefit a seasoned cook or a beginner with the easy to follow directions and illustrations.

There is a sign in my kitchen that reads, "My collection of cookbooks is far superior to my cooking." OK, I admit it, I'm hooked on cookbooks. But if I could have only one, it would be the comprehensive Illustrated Encyclopedia Search and find a lot of education books in many category availabe for free download.
